🌞 A Sun-Kissed Adventure in the Corbières! 🌞

Yesterday, we embarked on a delightful journey through the picturesque Corbières region, heading to Leucate for some fresh oysters, mussels, and fish. The sun was shining brightly, with rain clouds hovering over the majestic Pyrenees, setting the perfect backdrop for our adventure.

Our first stop was the charming village of Eus, one of Conflent's 'most beautiful villages in France' and renowned as an artistic site. Perched on a granite hilltop, Eus is also celebrated as one of the sunniest villages in France. The 18th-century Church of St. Vincent, built on the ruins of an ancient castle, offered stunning views and a glimpse into the village's rich history.

We continued our journey to Villefranche-de-Conflent, an important strategic location historically occupied by Celtic tribes, Romans, Visigoths, Muslim Moors, and the Spanish. The town's fortifications, built by the counts of Conflent in the 9th century, stand as a testament to its storied past.

For dinner, we dined at the delightful Restaurant L'Echauguette, where we had the pleasure of meeting Alex and indulging in some delectable Catalan beef.

Of course, no trip is complete without a stop at the organic markets along the way. We picked up some fresh tomatoes to bring a taste of the journey back home to Carcassonne.
